Restaurant Vanille: eat with the chef
Eat with chef-cuisinier Peter van Rooij: that’s the recipe for success at restaurant Vanille in Eijsden, the beautiful town on the Meuse a stone’s throw away from Maastricht. ‘Eat together, that’s our special Monday evening offer. Inspired by the guests, the events and dishes of the weekend, guests can enjoy the chef’s creations and inspiration at a favourable price. And, really, we do the same during the rest of the week: surprise, create and pamper. We are not very concerned with the price – what counts for us is good honest cooking with the best ingredients. It’s exciting to create new dishes every day and to do something that sets us apart from the rest. We don’t have a fixed menu, we usually don’t decide until the morning what we are going to cook that day. Then we incorporate our ideas into our ‘Cramignon’ menu, a six-course menu based on the tradition of the annual ‘Bronk’ sacrament procession in Eijsden. Just like the swinging folk dance, it is a surprising series of exciting flavours, regional ingredients, and good from start to finish.’

The delights supplied by the team of restaurant Vanille don’t stop with the dinner menu – the wines are also splendid! The interior will surprise you when you step inside the building from 1910, located in the centre of picturesque Eijsden. If you are expecting old décor, you will feel cheated: the interior is modern and sleek, and boasts a retro tiled floor. This lends the restaurant its own unique charm.
