Since September 2019, Servais Tielman and cuisinier Guido Braeken are in charge of Beluga Loves You. Together with his wife, Tielman took over the restaurant from Hans van Wolde.
Servais already knew the restaurant very well, since he has worked for years as a sous chef under the direction of Van Wolde. Servais has been developing his own cooking style c.q. identity ever since the start of his first restaurant, Cucina Del Mondo (2012).

With Beluga, Servais Tielman focuses on the head to tail-philosophy that he has developed over the years. The pureness of products is leading. His philosophy translates in an exciting and quirky way that changes at least four times a year through the Beluga Loves You Favorites menu. Sommelier Beau Dengis takes you into the world of his wine choices with surprising gems. Dengis’ way of thinking fits in seamlessly with Tielman’s head to tail- philosophy that focuses on respect for the environment. Wines that are made in an artisan and responsible way have an advantage with Dengis. He brings his choices with his well-known passionate storytelling.
