Papaz, located in Wyck Maastricht opposite the train station, is the restaurant where hospitality, tranquillity and cosiness are combined with tasty Mediterranean dishes, accompanied by surprising creations from the versatile Persian cuisine.
Paul van der Heijden, chef, and his Iranian partner Parinaz Shekarabi, hostess, and their team are happy to welcome you in the stylishly decorated restaurant at Spoorweglaan 2.
Parinaz and Paul: ‘With both our menu and the interior, we want to bring the two worlds together, the Mediterranean and the Middle East, and show that these are not so different in the kitchen and can therefore reinforce each other well.
With us, a traditional French dish is given its own twist and flavoured with the fresh herbs that we bring from Iran ourselves.
The traditional recipes of our Iranian grandmother, Mama Pari, are used in the kitchen. From the approximately 25 types of herbs / spices that we buy fresh in Iran, we make our own culinary herb mix. Prior to this, the spices are processed by Mama Pari and Chef Paul in a special way to fully show off the ultimate flavours. This ensures that the guests can enjoy a true taste explosion on their carefully laid out plate! We have had the tableware, on which the dishes are served, made especially for Papaz in Iran. At Papaz, the dishes are therefore not only a feast for the taste buds, but also for the eye!
We also work with more “pearls from Persia”, such as Beluga caviar, saffron, home-made rose jam, pomegranates and special fruits and nuts from the desert.
For guests who want to experience the flavours of the Middle East, we recommend our special Papaz Menu. This Papaz Menu can be ordered for 2 people or more and is served according to the shared dining concept: enjoying together warm and cold Meza, home-made bread and a richly filled salad!
Traditional Iranian tea is also a “gem” of Papaz. Our beautiful ‘Samavar’, with which the tea is made in a unique way, is bubbling every day!
We are happy to advise our guests with every dish on our menu with a wine, beer or tea suggestion to create the most complete taste experience.
Our “gem” on the wine list is the famous Château Musar 2003 from Lebanon, (white and red). A wine with a story, and perfectly suited to our meat and fish dishes. We are happy to advise you!
Our home-made desserts are a must to conclude the dinner. We serve an ice-roll from the plancha with every sweet dessert: home-made ice cream with different flavours and toppings of your choice prepared in a special way on our ice plate, an experience in itself! Our ice rolls complete your dessert!’
